Sable is a French version of shortbread cookies, which originated in Normandy. Butter, flour, sugar and salt; the combination yields a treat that is crisp and crumbly, or as the word sable implies – sandy; a texture that literally melts in your mouth. With the addition of a few special ingredients, these tender morsels become intoxicating.
